Mediterranean Summer Salad

I just threw this together with stuff I had in the fridge and OMG, had to share!

Ingredients

1 cucumber

2-3 medium size tomatoes

1 avocado

half red onion

fresh basil (or herb of choice)

feta cheese

raw pine nuts (for toasting)

sprinkle of lemon juice or vinegar of choice

salt to taste

Directions

To toast pine nuts, place on a piece of tin foil in the toaster oven, set on level 2, then leave them in the oven about 30 seconds after the toaster shuts off.  Check frequently if you have never toasted pine nuts before because they burn quite quickly.

Dice cucumber, tomatoes, avocado, onion, and basil to your liking.  Throw in a bowl, sprinkle with salt, then toss together.  Toss in feta cheese and cooled pine nuts.  Sprinkle with about a tablespoon of lemon juice or vinegar (I used white balsamic).  I found before adding the vinegar that the salad tasted amazing without it, I just added a little to prevent the avocado from turning.  If you want to leave out the feta, it may need a little olive or walnut oil to add richness.
