The Perfect Baked Sweet Potato

This recipe is courtesy of Empowered Sustance, but it is by far the easiest and best way I have found to bake a sweet potato.

Ingredients

Organic sweet potatoes (or yams)

Directions

  1. Place a sheet of tin foil on the bottom rack of your oven or the bottom of toaster oven (I usually do these in the toaster oven) to catch drips.
  2. Rinse sweet potato and pierce it 3-4 times with a fork.
  3. Place sweet potato directly on middle oven rack.
  4. Turn oven to 425 degrees F (don’t preheat).
  5. Bake for 45 minutes for sweet potatoes/yams that are 2-3 inches in diameter. For sweet potatoes that are up to 4 inches in diameter, bake for an hour. For super large sweet potatoes, bake for an hour and 15 minutes.
  6. After the time has elapsed, don’t open the oven but turn it off. Let the sweet potatoes sit in the oven for at least 10 minutes, up to an hour. Remove from the oven and eat immediately, or remove the skin and store in a container in the fridge.

Top your sweet potato however you like ~ I prefer organic butter, a little sea salt, and a dash of real maple syrup, yum!
